- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, ensuring an overhang for easy removal.
- Melt the butter in a medium saucepan over low heat. Remove from heat and stir in granulated sugar until fully combined.
- Add eggs and vanilla extract to the butter mixture, whisking until glossy and thick.
- Sift in all-purpose flour, unsweetened cocoa powder, and salt. Stir until just combined, avoiding overmixing.
- Pour the batter into the prepared pan and smooth the top. Bake for 28–32 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Place the pan on a wire rack and allow brownies to cool completely in the pan.
- Remove brownies using the parchment paper overhang. Cut into 16 sticks, each approximately 3/4 inch wide.
- Place white chocolate or candy melts in a microwave-safe bowl. Heat in 20-second intervals, stirring each time, until melted and smooth.
- Dip one end of each brownie stick into the melted chocolate. Lay on a parchment-lined tray and immediately top with festive sprinkles.
- Insert a lollipop or popsicle stick into the uncoated end if desired. Allow chocolate to set fully before serving.
