Instructions

Whisk rice vinegar, sugar, and salt together. Gently fold into warm rice. Let cool to room temperature.
Prepare Nori:
Place nori sheet shiny side down on bamboo mat. With damp hands, spread thin layer of rice over nori, leaving 1-inch border at top edge.
Add Sesame:
Sprinkle mixture of black and white sesame seeds over rice.
Fill and Roll:
Arrange a line of each filling (bell peppers, cucumber, carrot, avocado, pickled ginger, cream cheese) across bottom third of rice. Roll tightly using bamboo mat, sealing edge with water.
Slice Rolls:
Slice each roll into 4 pieces with sharp, damp knife for clean cuts.
Serve:
